The Art of Ciabatta

Ciabatta is a difficult bread to master but it is unparalleled when you get it right! It needs a lot of love and must be handled with care.  Here at Denny’s 5th Avenue Bakery we believe the secret to making an outstanding loaf of ciabatta is in the fermentation and the mixing of the dough.

 

Ciabatta is a traditional Italian loaf with many different variations popular in the country’s many regions. We believe our version closely resembles those loaves found in Lake Como-a crisp crust with a soft, porous texture and light to the touch. Ciabatta bread is a wonderful option to use for dipping in olive oil or to use when making grilled sandwiches like Panini’s.

 

The baking process for Ciabatta is very lengthy due to the fermentation process associated with this ultra-hydrated dough. We produce a poolish the day prior to allow the deep aroma and nutty flavor to develop before we begin the baking process which includes cutting each piece by hand.
